Kandee Cooking: Oh My Meatballs

 The Time: last night
The Scene: my kitchen
The Setting: dinner time
The music: the brazilian station on Pandora
(I like to listen to fun and exotic music while I cook, so it feels like I'm on vacation! ha ha ha)
What was I cookin':
I made my meatballs with pasta and my homemade pesto sauce....
 I love the red tongs and the green pasta sauce......
And here was the finished product.

Jordan was surprised at how good the meatballs came out...so here is my recipe if you want to wow your family, friends, or a special someone:

Kandee's Oh My Meatball Recipe
(none if this is too exact, I just throw it all in, so I'm trying to figure out what the measurements would be!)
1lb. ground (grass fed, is how I roll) beef
1/2 cup ketchup  (I use OrganicVille Ketchup that's sweetend with Agave- so good!)
1/4 cup stone ground mustard (the kind with the little brown mustard seeds)
1/2 an onion chopped up like confetti
1/2 parmesan cheese
3/4 cup panko bread crumbs
2 eggs
as much pepper as you like
a few teaspoons of salt (or as much as you think will be tasty)
Olive oil to drizzle on baking dish.

Warm oven to 450 degrees.
In a bowl put all your ingredients. Mix together all the ingredients with your hands, squishing it with your hands until everything is all mixed together and evenly distributed. Then take a glass baking dish, and drizzle with Olive Oil.
Form into ball shapes, a little larger than a golf ball and place onto baking dish.
Bake for 20 minutes. 
I always like to cut one in half to make sure they have fully cooked through.

And you will enjoy meatballs that are almost as enjoyable as dessert!
