Blueberry Cheeseflake (like Cheesecake but not)

Ok, this may very well be the best thing I have tasted all week!
This is my mom's creation...which she let me name, so ehem, may I introduce you to the...
drum roll please....
Blueberry Cheeseflake
(it's got hints of cheesecakey-ness, but the delicate flakey crunch  that send your tastebuds into "oh my what-ness!"...is amazing! This is a pastry gone wild!)

So it's time to bring back....(at least for this blog post anyway) KANDEE'S FOOD NETWORK!

Here's the recipe...but I must warn you...it is redonk-a-donkulously good. Now that you've been warned here's how to cook up some delish-a-danger:
WHAT YOU NEED:
1 package of Pre-made Phyllo (or Filo dough, you say Filo, I say Phyllo...ha ha) dough sheets (Phyllo dough is a paper thin dough that is great for pastries)
1 package or 8 oz. of Cream Cheese
1 stick of butter (you won't use the whole thing)
1 Teaspoon Vanilla Extract
1/2 Cup Sugar (add more to taste)
1 Apple Peeled and diced extra fine (*this is optional- I usually can't stand apples in anything, but you can't even taste them and they give it extra crunch!)

NOW WHAT TO DO:
Take your Phyllo dough and some kitchen scissors and cut them the sheets into squares or rectangles about 3-4 inches long and 3-4 inches wide. Really you can make them any size you want! You'll want them to be around 12 Phyllo dough layers. 

Melt 1/2 a stick of butter and brush it onto the top of the Phyllo dough. You can also lift each "square" apart, and brush some on top of the layers, every 4 or so sheets of Phyllo dough in each "square" stack, for extra buttery-ness.

Sprinkle some sugar on top of each square so it get browned and crunchy on top when you bake it.

Bake the Phyllo dough squares at 350 degrees (fahrenheit) for 14-18 minutes, as soon as you see the edges starting to get golden brown- take them out.

While the Phyllo Squares are baking, mix up your cream cheese and 1/2 cup of sugar, and vanilla extract. You can add another 1/4 cup of sugar if you want it to be sweeter. Let sit until the squares are done baking. The cream cheese will warm up, just as it sits at room temperature and melt the sugar so it had a smoother texture. Stir very quickly right before you put it on, stir it really fast for 10-15 seconds, to make it really smooth and creamy.

Take your Phyllo dough squares, and plop on  the cream cheese mixture (at least 3-4 spoonfuls) on top of the Phyllo squares. Sprinkle the finely diced apples. (We used Honey Crisp apples)
I promise you, I can't stand apples cooked or in almost anything, but when you sprinkled the finely chopped apples on top it was delicious, so it's up to you to apple, or not to apple!
Then decorate with fresh blueberries (or any berries you like)...and get ready for a yum-tastic dessert!

It really is pretty fast to make, and worth every second!
